Harvesting & Roasting 100% Hawaiian Coffees

Approved suppliers and vendors in Pooki’s Mahi’s supply chain ecosystem adhere to very high standards in manufacturing, supply chain and operations excellence.  The primary focus is quality and the secondary area is consistent execution.  Pooki’s Mahi’s manufacturing teams are specific to the product lines and single serve cups pods manufacturing.

Step 1:  Selection of  100% Kona coffees, 100% Maui Mokka coffees, 100% Kau coffees

Our coffee manufacturer consistently harvests 100% Hawaiian coffee beans that meet Pooki’s Mahi’s stringent requirements.  Pooki’s Mahi’s coffee manufacturing partner harvest 100% Kona coffee beans from various farmers Kona, Hawaiian based farmers in addition to the family owned and operated farm that meet high quality standards.  The Kona coffee beans are roasted to spec at the manufacturing headquarters in Oahu, Hawaii. Pooki’s Mahi’s coffee manufacture roasts the largest amount of 100% Kona coffee beans.

We strive to harvest, roast and consistently pass first article inspections (FAI) for our 100% Kona coffee cups pods, 100% Maui Mokka cups and 100% Kau single serves.  

Step 2:  Testing Kona Coffee Beans

Pooki’s Mahi’s coffee manufacturing facilities owns one of America’s oldest coffee companies founded in 1864.  Coffee roasters conduct several physical and sensory tests on the Kona coffee beans:  bean size, moisture, density and reviewing bean defects.  

Step 3:  Cupping Hawaiian Coffees

The cupping process conducted by Pooki’s Mahi’s coffee manufacturer evaluates coffees based on a few critical characteristics to match the profile template.  Kona coffees are evaluated on several distinctive traits:  aroma, flavor, acidity, body, after taste, uniformity and balance.  Our manufacturing coffee roasters are passionate about providing high quality Kona coffees that consistently pass the multi-step tests.  

Step 4:  Roasting Kona Coffee

Precision roasting technology and equipment are used to roast each batch to specifications.  For example, a roasting batch that does not pass coffee QA inspection willnever transition to cup manufacturing.  Our fresh roasted Kona coffees are packed in vacuumed sealed bags and shipped to Pooki's’ Mahi’s single serve manufacture to mass produce into single serve cups pods.  

Step 5:  Grinding Kona Coffee

Pooki’s Mahi’s single serve cup manufacturing and FAIs are completed in mainland USA.  Whole bean coffee is not grinded until it is ready for cup and pouch production. Our single serve cup manufacture grinds the Kona coffee bean and uses state-of-the-art laser technology to analyze coffee particle size of optimal extraction of coffees.  Each coffee is packaged almost immediately after roasting and carefully flushed with nitrogen to force out oxygen that is in sealed pouch.

Step 6:  Coffee Pods / Single Serves & Pouch Wrapper

Pooki’s Mahi’s 100% Kona coffees, 100% Maui Mokka coffees and 100% Kau coffees  are exclusively packed in a cup composed of 99% mesh and 1% out of #5 recyclable plastic.  The single serve cups pods technology is superior and the most eco-friendly packing single serve option.  Pooki’s Mahi’s single serve cup manufacturing packages each cup almost immediately after roasting.  Each Kona coffee cup single serve pod is carefully flushed with nitrogen to force out oxygen that is in the product.   

Step 7:  First Article Inspection (FAI)

Pooki’s Mahi conducts an official First Article Inspection (FAI) after each single serve cups pods production run.  Pooki’s Mahi’s thorough FAI measures each process step within single serve manufacturing processes.  Our FAI score card and measures a sample of the finished good against the customer specs in the order.
